SLOW PROOFED DOUGH
We allow our dough to rise slowly in a retarder for 36 plus hours to aid in flavour development, as well as to give it a crunchy yet airy delicious crust.
The balance between sweetness and acidity in sauce is key in creating a good slice. We believe we have found the best ratio that creates a flavourful sauce with light acidity.
Using the best quality cheese possible is important to us. Our cheese has delectable flavour and just the right amount of “stretchiness” to compliment our dough and sauce.
